Grandma's Old Carrot Cake Recipe

Ingredients

1 cup cane sugar

1 cup water

1/2 cup white sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

1 (18.25 ounce) package white cake mix

2 eggs

2 teaspoons vanilla extract

4 cups frosting, softened

1 cup dry milk

2 cups large marshmallows

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 10 inch Bundt pan. In a medium bowl, combine the sugar, water, 1/2 cup of sugar, salt and vanilla. Stir together well.

Pour dry mixture into oven, and bake in the preheated oven for 55 minutes, until a toothpick inserted into the center of the cake comes out clean. Let cool before frosting topping.

To Make Filling: In a small saucepan combine the eggs, 2 teaspoons of vanilla, and 1 cup of milk. Cook over low heat for about 1 minute until thick. Stir in the spices. Bring to a boil and then remove from heat. Stir in the melted milk and marshmallows. Spread over cooled cake. Let cool 10 minutes before frosting top.
