1 teaspoon white vinegar
1 teaspoon honey
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 small onion, sliced
6 green chile peppers, seeded and chopped
1 teaspoon garlic powder
1 teaspoon dried parsley
1/4 teaspoon dried oregano
1 tablespoon dried basil
1 1/2 quarts water
3 teaspoons olive oil
Fill a large saucepan with about 1/2 cups water and heat over medium-high heat. Stir in vegetables and vinegar or honey and salt; cover, remove from heat and allow to cool.
In a small saucepan, combine vinegar, honey, salt, pepper and onion. Bring to a boil, stirring occasionally. Gradually whisk vinegar mixture into tomato sauce, releasing the flavors from time to time. Simmer 1 hour for about 30 minutes, stirring occasionally.
Stir olive oil into tomato sauce, offering an additional addition to tomato portion if desired. Serve at room temperature.
