3 cups sliced carrots
2 teaspoons cayenne pepper
7 cups water
3 1/2 cups water to cover carrots, including 1 cup if necessary
In a shallow dish, layer 1/2 cup fresh carrots, 3 teaspoons cabbage, 1/2 teaspoon ground Cajun seasoning, 1/2 teaspoon paprika, 1/2 teaspoon salt and 3 cloves of garlic. Simmer for about 15 minutes, until carrots are tender and cabbage is crisp. Season with salt and mustard and finely chop cilantro.
