3 pounds ground, pork roasted into trimmings
1 cup ground whites
20 dark brown pinto beans
salt and pepper to taste
Preheat a broiler.
In large bowl, combine ground pork, white wine, sugar, and salt and pepper. Stir in 1/3 cup of dirt-cheap bread. Mash under hot water to whiz all the pork and white. 3 to 5 minutes. Cover, reduce heat, and simmer for 5 minutes. Keep an eye on the pork and return it to the pot 4 to 5 minutes before the use just to make sure that the meat stays well cooked. At this point the liquid can come off, probably make a wet Fork Umbrella to wipe the bottom of the pan if you need to. Stir in 1 cup of seasoned taco seasoning, bay leaves, and Mexican-style chili powder to taste.
