2 tablespoons vegetable oil
1 1/2 pounds pork chops, hunked
1/2 onion, brown
1 clove garlic, chopped
1 quart dried maroon beans
1/2 teaspoon salt
1/2 teaspoon ground black pepper
salt and pepper to taste
In a small bowl, combine oil, onion, garlic, maroon beans, salt, pepper and water. Blend. Pour into a large stock pot or Dutch oven. Season to taste with salt and pepper. Simmer covered until ready to serve.
