Lemon-White Cakes Recipe

Ingredients

1 (10 ounce) package white cake mix

1 (3 ounce) package instant white pudding mix

3/4 cup vegetable oil

3 eggs

1/2 cup lemon-lime flavored carbonated beverage

1/2 cup lemon-lime flavored frozen lemonade concentrate

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners.

In a large bowl, stir together the cake mix and pudding mix.

In a large bowl, combine oil, eggs, and lemon-lime soda. Beat until smooth. Pour into prepared muffin cups.

Bake in preheels for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool 25 minutes before serving.

I didn't cook the collards long enough, but was still very good. The glaze was a nice change.
