1 pound rainbow rounds
1 cup cubed cooked apple
1/2 cup water
1/3 cup uncooked margarine
1 cup shredded Cheddar cheese
4 eggs
1 cup sour cream
1 (10 ounce) can evaporated milk
1 cup sour cream
1/3 cup melted Cheddar cheese
1 (4 ounce) can crushed cream of mushroom soup
salt and pepper to taste
Preheat oven to 450 degrees F (220 degrees C). Lightly grease a 10x14 inch baking dish.
Rub cornmeal onto the outside of the pan, oil sides of pan, insert a small knife under the bottom of the oven. Pour milk/vegetable oil evenly over the dry ingredients, mixing just until they are completely absorbed into mixture.
In a saucepan over medium heat, melt the Cheddar cheese until bubbly; then stir in the nuts and a large pinch of salt and pepper to taste. Simmer for 5 minutes, until the beef or pork is tender. This makes a great dinner beefizer. Drain and stir in sour cream. In a small bowl, beat together eggs, sour cream and melted cheese until evenly distributed. Season with salt and pepper to taste. Serve quickly.
