8 slices white bread, cut into 1-inch cubes
1 cup chopped onion
1 cup shredded mozzarella cheese
2 eggs
4 cups water
1/2 cup butter
Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl combine bread cubes, onion, mozzarella cheese, eggs and water. In a large bowl, combine butter and water. Pour egg mixture into milk/butter mixture, and toss to coat. Stir in 1 cup of the bread cubes, onion, mozzarella cheese, eggs and water. Transfer to a 1/2-quart casserole dish.
Spread outside baking sheets with foil, spraying with cooking spray. Bake for 20 to 25 minutes, or until golden brown and firm.
