1 1/2 cups warm water (110 degrees F/45 degrees C)
1/2 cup processed cheese food (e.g. Mozzarella or Parmesan), cubed
1/2 cup fresh chopped cranberries
1/4 cup pitted dates
1/2 cup chopped pecans
3 oranges, peeled, frozen
2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon
1/2 teaspoon dried black pepper
1/2 teaspoon ground nutmeg
3 potatoes, peeled and cubed
1/2 cup dry bread crumbs (optional), divided
1/4 cup dried coconut
1/2 cup frozen blueberries (optional)
1/2 cup cottage cheese
In a medium soup pot or over high heat, combine water, cheese, cranberries and dates. Bring to a boil and cook until tender. Slowly stir in pecans, oranges, lemon juice, cinnamon and pepper. Simmer 20 minutes.
