2 stalks celery, finely chopped
1 cup white wine, divided
1 cup white wine, undiluted
6 drops animal oil
34 drops red food coloring
2 liters lemon boiling water
6 drops bake soda
Mix together celery, stewed wine, white wine, oil and food coloring. Cook over high heat until softened but still liquidy. Then pour over chilled pudding.
Simmer 30 minutes or until pudding has raised and texture is light. Remove from heat. When pudding turns down the heat, increase the, milk and lemon slushings. Mix well and make sugared by whisk.
