1 tablespoon olive oil
1 teaspoon freshly ground black pepper
1 teaspoon salt
1 clove garlic, torn
1 large onion, peeled and chopped
1 green bell pepper, diced
1 teaspoon dry white wine
3 tablespoons golden raisins
8 skinless, boneless chicken breasts
1 cup frozen chopped spinach, thawed and drained
1 cup dried onion flakes
1 cup shredded mozzarella cheese
1 (16 ounce) can cherry tomatoes, drained
Heat olive oil in a large saucepan over medium heat. Saute garlic and pepper until tender. Stir in onion and green bell pepper; reduce heat to low and cook 1 minute. Stir in wine and raisins and cook 1 minute more, stirring constantly. Stir in tomato sauce and saute until almost cooked. Stir in chicken and spinach, and bring to a boil. Reduce heat to low and simmer for 15 minutes. Add peas and tomatoes, and simmer for 15 more minutes, stirring occasionally.
