Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a medium mixing bowl, stir together the oats, brown sugar and egg. Stir in the butter, milk and vanilla until well blended. Drop dough by spoonfuls onto the prepared cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, until lightly browned and crunchy. Remove from cookie sheets to cool on wire racks.
