8 ounces salmon, skin removed, large tail included
8 ounces fresh orange, peeled and cut into strips
1/2 head romaine lettuce, torn into small pieces and rinsed
1 large tomato, broken into small pieces
4 small green onions, chopped
salt and pepper to taste
1/2 lemon, white or blue peel
Preheat oven to 375 degrees F (190 degrees C).
Place turkey in an 8x8 inch casserole. In separate small bowl, combine avocado, peppers, cherry tomatoes, 2/3 cup of the fat from peppers, salt and pepper. Add lemon peel and toss.
Pour dressing over hot turkey and toss to coat.
Place in oven and bake or grill, uncovered, for 30 minutes, or until tender.
