Mulberry Multi-Seasonal Pudding Recipe

Ingredients

1/2 cup vegetable oil

1 cup white sugar

2 eggs

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup vegetable oil

1 cup raisins

1/2 cup chopped pitted dates

1/2 cup chopped walnuts

2 tablespoons distilled white vinegar

Directions

Preheat oven to 400 degrees F (200 degrees C).

In a medium bowl, stir together 1/2 cup oil, 1 cup sugar and 2 eggs. Stir in flour, baking powder, salt and baking food. Stir until just combined. Fold in apricots and nuts.

Sprinkle dates and vinegar over the pudding and pour into a 2 quart, nonporous glass dish.

Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the pudding comes out clean.
