2/3 cup shortening
3/4 cup buttermilk
2 teaspoons white sugar
1 cup buttermilk
3/4 cup shortening
4 egg whites
Preheat oven to 300 degrees F (150 degrees C). Grease cookie sheets. Sift 1 cup shortening, powdered sugar, 1 cup buttermilk and 2 teaspoons white sugar. Set aside.
In a large bowl, cream together the shortening, buttermilk, 2 teaspoons sugar and 3/4 cup of butter until smooth. Blend in the egg whites one at a time, then stir in the prepared cookie sheets. Drop dough by heaping tablespoons onto the prepared cookie sheets 3 inches apart.
Bake for 12 to 15 minutes in the preheated oven. Cool on wire rack.
