2 1/2 cups honey
3/4 cup powdered sugar
1/4 cup butter
3 eggs
3 teaspoons vanilla extract
1/2 teaspoon salt
1/2 cup golden raisins
1 cup chopped walnuts
1/2 cup flaked coconut
1/2 cup chopped pecans
1/2 cup chopped pecans

Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch loaf pan.
In a large bowl, stir together 1 cup honey, powdered sugar, and butter.
In a medium bowl, beat the eggs, one at a time, until they are creamy, then fold in the flour.
In a large glass or metal bowl, beat the egg whites until soft peaks form, then fold in the remaining 1 cup sugar, one tablespoon at a time, until no streaks remain. Drop the batter by heaping spoonfuls onto the prepared pan.
Bake in the preheated oven for 40 to50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Meanwhile, preheat oven to 375 degrees F (190 degrees C). In a small saucepan, melt 1/2 cup of butter, stirring often. Stir in the remaining 1 cup butter, 1 cup flour, and the salt and 1/2 cup raisins. Cook covered until tender, stirring occasionally. Remove from oven and sprinkle nuts and pecans over the loaf.
