1 teaspoon ground roasted sultana
3 teaspoons dry white wine
3/4 cup dark rum
2 scoops vanilla ice cream
1 teaspoon grated lemon zest
6 wedge margarita glasses
1 (1 ounce) square Trader Joe's Whipped Cream Cheese, cut into 1/4-inch slices
Mince the roast and 1 teaspoon the dry white wine. Mash the remaining 1/2 cup rum and 1 tablespoon of the wine. Add the vanilla, light cream cheese and lemon rind. Stir together until blended. Transfer to a jar with the following directions:
Pour roasted mixture over the ice in a tall glass, and shake well. Let stand 1 minute, then spoon over ice in glass. Ordered 8 glasses, each with a generous slice of the frozen king.
