Pineapple Upside-Down Dessert Recipe

Ingredients

1 cup graham cracker crumbs

1/2 cup semisweet chocolate chips

2 tablespoons white sugar

1 (8 ounce) package cream cheese, softened

1/2 cup white sugar

1 egg

1 lemon

1/2 teaspoon vanilla extract

1/2 cup white sugar for decoration

1/2 teaspoon almond extract

1/2 cup buttermilk

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.

To Make Crust: In a medium bowl, cream together graham cracker crumbs and chocolate chips. Stir in the cream cheese, 1/2 cup sugar and egg. Add the lemon juice, vanilla and cooled buttermilk, mix well. Spoon the cream mixture into the prepared pan.

To Make Filling: In a medium bowl, beat cream cheese, 1/2 cup sugar and egg until smooth. Gradually stir in 1/2 cup of flour, 1/2 teaspoon at a time, and beat until all ingredients are fluffy. After the second beat, stir in the buttermilk. After the second folding, stir the egg mixture back into the batter to make sure that it is all well incorporated.

Drop dough by rounded tablespoons onto prepared cookie sheet. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving hot.

Excellent recipe! Fast and Easy and leaves lots of room for creativity. I found tomatillos at my local Kroger, so I combined them with red pepper flakes and used my powder MELT blender to creamy-up the sauce. I was worried that the sauce wouldn't have thickened enough, but it was perfect. Couldn't have asked for better guacamole!
