Coldwater Buckwheat Flax Seeds Recipe

Ingredients

1 cup unsalted butter, softened

1 cup white sugar

1/2 cup brown sugar

1/2 cup water

1/2 cup buckwheat flour

1/2 cup water

1/2 cup lemon juice

1/2 teaspoon salt

1/4 cup coldwater

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together the butter and sugar until light. Stir in the brown sugar and water. Add the flour, then the salt and lemon juice. Stir together well.

Pour into an 8x8 inch casserole dish and spread evenly. Tint the top with lemon juice, and top with coldwater.

Bake at 350 degrees F (175 degrees C) for 1 hour.

So far so good. I will experiment with the following directions: -Put 1/2 tsp baking powder and 1/2 tsp salt in 1/2 cup of flour (does take quite a bit longer though, but worth it). -Put the rest of the ingredients in the bowl of a food processor for a few seconds. -Process about 3-4 batches, left to warm, then add it back to the bowl of flour for the next batch. -Continue processing until all the balls are smooth and no longer lumpy. Then, I add it back to the bowl of flour for the last batch. This is by far the easiest way to make flax balls, and I have been making these for years. You can't go wrong here so give it a try.

I have made this several times and love it! It is a very simple recipe that can be adjusted to suit any taste. I have never used wheat gluten with such ease and it yields such a wonderful result. I have also added nutmeg to mine and it gave it a nice nutty flavor. Thanks for sharing this easy healthy recipe!
