3/4 cup butter, softened
3/4 cup white sugar
1 egg
2 tablespoons unsweetened cocoa powder
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup rolled oats
1 cup flaked coconut
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter and sugar until soft peaks form. Beat in the egg and cocoa. With an electric mixer on low speed, beat in flour one cup at a time, then stir in salt and 1 cup rolled oats. Stir together the mixture with the remaining 1 cup oats and coconut and drop by heaping spoonfuls onto prepared cookie sheets.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before breaking into squares.
