Potato Casserole Recipe

Ingredients

1/4 cup butter

1/3 cup dry bread crumbs

2 tablespoons melted butter

2 eggs, beaten

2 cups bread cubes

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish.

In a medium bowl, stir together potatoes and 1/4 cup butter. Stir in breadcrumbs, melted butter and eggs. Stir in potatoes, 2 cups of the bread cubes, half of the egg mixture and 2 cups of the potatoes. Pour into prepared casserole dish; top with bread cubes. Bake in preheated oven for 45 minutes.

I thought this was very tasty and good, but I added WAYYY too many spices. I would suggest using 1/2 tsp. each of garlic, cardamom, and basil. I used brown sugar cookie mixes for the topping and was due about 6oz of cream cheese. It was cold, but I think because I used EF Newman's Old Fashioned Whiskey, it wasn't too cold. It might be because I used boxed margaritas, or just didn't have them. Whichever it was, I didn't finish the thing. I used the remaining ingredients and made taquitos with it, and he placed them before him and ate them. He said they were wnderful and very easy to make. I will definately make them again !
