Quick and Easy Cherry Strawberry Pie Recipe

Ingredients

4 (9 inch) prepared chocolate cake layers

2 cups white sugar

2 cups pink food coloring

1/2 cup unsalted butter

2 egg yolks

1/2 cup all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1/4 teaspoon ground cinnamon

2 egg whites

1 egg yolk

1 teaspoon cream of tartar

1 teaspoon vanilla extract

1 1/2 cups coffee flavored liqueur

1/2 cup heavy whipping cream

1/2 cup cherry pie filling

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch round pan.

In a large bowl, stir together 1 cup of sugar, 1 cup of water and 1/2 cup of flour. Stir in the milk, one cup at a time, until smooth. Beat in the butter or margarine, one cup at a time, then the egg yolks and flour mixture. Stir in the milk mixture just until all of the milk is used. Stir in the vanilla and 1/2 cup of coffee flavored liqueur. Spread half of the batter into the prepared pan.

Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. Cool completely before filling.

To make the pie filling: In a medium bowl, stir together 1/2 cup of sugar and 1/2 cup of flour. Stir in the following: 1 cup white sugar, 1/2 cup flour, 1 egg, 1/2 teaspoon grated lemon zest. Cut in the butter or margarine until it resembles chunky breadcrumbs; stir in the lemon zest and 1/4 of the cream that you are using. Finally, fold together the chocolate and coffee liqueur. Spread half of the filling into the half of the crust. Top with the remaining whipped cream, and arrange the cherries.
