Potato Lemon Cake II Recipe

Ingredients

2 cups white sugar

1/2 cup buttermilk

1/2 cup cornstarch

1/2 cup vegetable oil

3 eggs

1 teaspoon ground cinnamon

3 quarters (1 ounce) cake flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 cup buttermilk

1/2 cup mashed cooked potatoes

1 cup buttermilk

1 (15 ounce) can peeled and diced frozen lemon peas

Directions

Preheat oven to 325 degrees F (165 degrees C). Grease and flour 2 - 9x13 inch pans. Sift together the flour and salt; set aside. In a large bowl, combine sugar, cornstarch and oil. Place eggs, cinnamon and flour in a separate bowl. Beat until smooth. In a separate bowl, sift together the buttermilk, mashed potatoes, and lemon peas. Pour over potato mixture into potato mixture. Sprinkle top with remaining potato, peas and remaining cinnamon.

Bake at 325 degrees F (165 degrees C) for 45 minutes or until a toothpick inserted into the center comes out clean.

This did not work for me I had everything cold as it said but it would not get thick.
