Pepperoni Recipe

Ingredients

1 pound pepperoni sausage, sliced

1 cup ricotta cheese

1 cup grated Parmesan cheese

1 (10 ounce) package frozen chopped spinach, thawed and drained

1 (12 ounce) package frozen chopped spinach, thawed and drained

1/4 cup water

Directions

Preheat oven to 375 degrees F (190 degrees C).

Slice pepperoni into 1/2-inch slices. Crumble the off pieces.

In a skillet over medium heat, combine ricotta, cream cheese, Parmesan and spinach. Bring to a boil and reduce heat to low. When sauce is heated, combine spinach and water, bring to a boil. Whisk in sauce until thick, about 5 minutes. Simmer until mixture thickens, about 5 minutes longer.

Layer 1 tablespoon cheese on each pepperoni slice, placing 1 attempt at 2 slices in the bottom of a 9x13 inch baking pan. Bake for 30 minutes, or until cheese is melted and crispy. Add more water if desired. Cool and serve with pepperoni slice.
