4 potatoes, diced
1 cup meat broth
1 onion, chopped
1 cup frozen chopped onions, thawed and drained
cheese
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain. Reserve liquid.
Return potatoes to a large stockpot. Stir in broth, onion, onion mixture, salt and pepper. Bring to a boil. The vegetable will have to be slightly heated just to come to a boil. Reduce heat to low and simmer, uncovered, for 5 minutes or until potatoes begin to soften and things are heated through.
