1 pound skinless, boneless chicken breast halves, cut into 2-inch cubes
8 cups all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 cup shortening
1 cup butter - cold
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, stir together flour, salt, baking powder, baking soda and baking powder. Mix thoroughly. Set aside. In a large bowl, cream together shortening and 1 cup butter. Stir in flour mixture until mixture is to the consistency of coarse meal. Pour half of mixture into prepared spread) layer desired chicken parts in top of prepared pan, pressing bottom of pan lightly.
Bake in preheated oven for 35 to 40 minutes, or until no longer pink in center of pan. Cool 10 minutes before serving. (Note: Do not bring a large pot of water to a boil while cooking; cook for only 2 minutes.)
