Two Wise Don Potatoes – Spinach and Spinach Spinner Recipe
2 (8 ounce) packages chopped flaked tortellini
3/4 cup olive oil
1 1/4 cups all-purpose flour
2 teaspoons salt
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1/2 cup shredded mozzarella cheese, crushed
3 egg whites
Preheat oven to 400 degrees F (200 degrees C).
To Make Filling: In a saucepan over medium heat, heat olive oil. Stir in flour until well blended; set aside. Stir in salt and pepper; gradually cook until thick. Remove from heat and stir in cheese.
In large bowl, toss together tortellini and warmed milk mixture until thoroughly combined. Finally fold in beaten egg whites. Pour into 2 casseroles.
Bake 12-inch middle pastry in preheated oven 20 minutes.
