Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, mix flour, sugar, and salt. Set aside. In a medium bowl, beat together egg white and oil.
In a small bowl, combine egg core, almond extract, and double cream. Beat until well blended. Stir in espresso coffee flavored liqueur. Pour into greased and floured ring-sized muffin cups, or line with paper muffin liners.
Bake 25 omelet halves at 350 degrees F (175 degrees C) for 8 to 10 minutes.
