1 cup butterscotch topping
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1/2 cup unsalted butter
3/4 cup packed brown sugar
1/2 cup rolled oats
Preheat oven to 400 degrees F (200 degrees C).
In a medium bowl, combine butterscotch topping, white sugar and vanilla. Beat together butter and brown sugar until smooth. Add oats and mix until all ingredients are combined. Drop dough by rounded teaspoons onto ungreased cookie sheets.
Bake for 12 to 15 minutes in the preheated oven, until firm. Allow cookies to cool on baking sheet for 5 minutes before removing to wire racks to cool completely.
