1/2 cup buttermilk
1/3 cup packed light brown sugar
1/3 cup butter
1 cup all-purpose flour
2 eggs
1 teaspoon lemon extract
1 teaspoon grated lemon zest
1/2 teaspoon ground nutmeg
1/2 teaspoon almond extract
2 cups mini marshmallows or candy-coated almonds, chopped
1/2 cup confectioners' sugar for decoration
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together buttermilk, brown sugar, and butter. Stir in flour, eggs, lemon extract, and lemon zest. Stir into the mixture just until combined.
Drop dough by heaping tablespoonfuls onto ungreased cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet before removing from baking sheet to cool on wire racks.
