1 cup seasoned croutons
1/2 cup water
2 tablespoons tomato paste
3 tablespoons soy sauce
3 tablespoons chopped onion
1/2 cup scrambled eggs
1 4 ounce can diced tomatoes
1/2 cup uncooked white rice
1/2 cup shredded Cheddar cheese
1/2 (8 ounce) package cream cheese
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, mix together seasoned croutons and water until mixture is smooth.
In a medium bowl, whisk together tomato paste, soy sauce, onion, and eggs. Stir in tomato mixture, Cheddar cheese, and cinnamon.
Pour into a ungreased round or platter a 9x13 inch baking dish.
Bake, covered, in preheated oven for 25 minutes.
