1 cup butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped fresh basil
1/2 cup chopped dried mint leaves
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter, sugar, egg and vanilla until soft peaks form. Add the flour, salt, cinnamon, nutmeg, basil and mint leaves.
Pour mixture into baking sheet and bake for 12 to 15 minutes. Cool completely before removing from baking sheet. While baking, make the Meringue: In a medium bowl, whisk together the lemon juice, 1 cup of sugar, and 3/4 cup of flour. Stir in the rest of flour, cinnamon, nutmeg, basil and mint.
Bake for 21 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Immediately while still hot, drop cooled Meringue by heaping spoonfuls onto baking sheet.
