1/2 cup butter, softened
4 eggs
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 (8 ounce) container frozen blueberry pie filling
1/2 teaspoon lemon zest
2 cups milk, divided
1/2 cup finely chopped onions
1 teaspoon vanilla extract
2 tablespoons lemon zest
1/2 teaspoon blue cheese extract
Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch pan.
In a small bowl, cream together butter and eggs until light and fluffy. Beat in sugar, baking powder, salt and blueberries. Mix in lemon zest, milk, onion, vanilla and lemon zest. Stir egg mixture into creamed mixture until just blended.
Spread filling into prepared pan. Sprinkle blueberry mixture with 2 tablespoons lemon zest. Place pie filling over filling. Cover individual serving dishes with foil, and cut 2 large slits in foil. Pour filling into prepared dish.
Bake in preheated oven for 30 minutes, or until a toothpick inserted into center of pie comes out clean. Cool for a minute, and cool completely before cutting into squares.
