Oatmeal Raisin Bread Pudding Recipe


1 cup water

1 tablespoon salt

1 teaspoon baking soda

1 1/3 cups all-purpose flour

1 cup rolled oats

1 cup raisins

1 cup chopped dried pecans

1 egg, beaten

1/2 cup buttermilk

1/3 cup white sugar


Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine water, salt and baking soda. Stir in the flour, 1 cup rolled oats, raisins and pecans.

In a shallow dish or bowl, stir together egg, buttermilk and 1/3 cup sugar until well blended. Pour mixture into baking pan and sprinkle with 1/2 cup of reserved sugar.

Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 30 minutes, until a toothpick or wooden pick inserted comes out clean. Cool 10 minutes before serving.
