2 tablespoons vegetable oil
2 tablespoons white sugar
1 pound turkey sausage, sliced
6 large, medium-size onions, diced
1 tablespoon salt
1 tablespoon ground black pepper
3 (3 ounce) packages frozen chopped spinach, thawed and drained
1 cup dry bread crumbs
1 teaspoon ground cinnamon
Heat oil in a large sauce pan over medium heat. Brown sausage on both sides and then saute the onions in the hot oil for 1 minute.
Drain the sauteed onions and add salt and ground black pepper to the onions and saute for another minute. Stir in spinach, mix well and cook until ready to pull apart the meat and vegetables.
Once all vegetables are cooked, stir in the bread crumbs and cinnamon and simmer for another 1 minute. Serve hot.
