1/2 cup vegetable oil
1 1/2 cups white sugar
1 teaspoon salt
1 cup wheat flour
1 cup all-purpose flour
1 cup instant mashed potato flakes
1/4 cup butter, melted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup water
1/2 cup pitted dates
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, stir together oil, sugar, salt and flour. Stir in potato flakes, butter and baking powder. Stir in dates.
Drop dough by rounded teaspoons onto ungreased cookie sheets and bake for 15 minutes. Cool on wire rack. Cool completely before using as a tap for coffee or tea.
I've been making this cake since I could remember. It is so very easy to make and it is a wonderful visual presentation of a typical flan! Just add the chocolate chips and enjoy!
