1/2 cup butter
1/2 cup white sugar
1 egg
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 1/2 cups white sugar
2 1/4 cups sliced banana
1 1/4 cups milk
1 cup shredded coconut
1 cup chopped walnuts
1/4 cup raisins
Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a 9x5 inch loaf pan.
In a medium bowl, cream together the butter, sugar, egg and flour. Stir in baking powder, salt and baking soda. Stir in coconut, sugar and bananas.
Pour into prepared pan. bake in preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean.
Spread 1/2 the filling into the bottom of pan. Spread 1 cup the bananas over the banana crust. Spread remaining filling over the banana and spread the second banana over the banana. Spread the walnuts over the cake and place last banana over the walnuts.
Top with raisins and place in the oven for an additional 10 minutes. Cool, but not set, before serving with milk or cream.
