Mock Cakes Recipe

Ingredients

2 cups all-purpose flour

1 cup shortening

1/4 cup white sugar

1 teaspoon salt

1 egg

1/2 cup milk

1 cup canned cereal beans

4 tablespoons brown sugar

1/2 teaspoon salt

2 teaspoons ground cinnamon

2/3 cup packed dark corn syrup

3 eggs

2 cups confectioners' sugar

Directions

Preheat oven to 400 degrees F (200 degrees C). Stir together the flour and shortening. Stir in the brown sugar, salt and egg, one at a time. Gently stir all together, then gradually stir in the milk/cereal mix. Drop biscuit dough by rounded tablespoons onto ungreased baking sheet.

Bake for 20 to 30 minutes in the preheated oven, until golden. Let stand for 5 minutes before cutting but not before removing from baking sheet.

In a medium bowl, stir together cereal beans and 2 tablespoons brown sugar. Gradually stir in corn syrup until mixture thickens. Bake in a preheated 350 degree F (175 degrees C) oven for 60 minutes. Turn out cookies and sprinkle caramel-colored chips over the tops.

I followed this recipe exactly making no changes and these were great. My husband complained when they were all gone. My only warning would be to be careful when grilling over high heat like a BBQ. Some of ours were burnt, however my husband still inhaled his.
