Almond Meringue Pie III Recipe

Ingredients

1 cup fudge cake mix

1 cup water

1/2 cup unsalted butter

1 cup semisweet chocolate chips

1/2 cup chopped pecans

2 egg whites

1/2 teaspoon vanilla extract

2 (9 inch) prepared graham cracker crusts

1 pinch salt

1 pinch ground cinnamon

1/2 cup white sugar

1/4 cup semisweet chocolate chip (optional)

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 8 - 13 inch round pans. Sift together the flour and baking soda. Set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the salt and cinnamon. Stir in the brick of chocolate or pecan mixture. Stir in the egg whites, vanilla extract and 1/2 cup of the sugar. Pour batter into prepared pans.

Bake in the preheated oven for 25 to 30 minutes, until a toothpick inserted into center of the pie comes out clean. Allow to cool before frosting. Let cool completely before serving.
