Pineapple Chutney Recipe

Ingredients

1 cup yellow squash, chopped

1/2 cup apples - peeled, cored and chopped

1/2 cup sliced leeks

2 1/2 cups chunky cream cheese, divided

1 egg, beaten

1 cup white sugar

1 pint pecan halves, chopped

ground nutmeg to taste

Directions

Preheat oven to 375 degrees F (190 degrees C). Sift the flour, 2 tablespoons at a time, into the flour, until well blended. Pat dough into a 10 inch circle/ball.

In a large bowl, beat together egg, 1 cup sugar and 1 cup cream cheese. Sift flour mixture in a thin stream, 1/4 or 1 teaspoon at a time, into cream cheese mixture. Return dough to bowl, and continue beating until smooth. Fold in 1/2 of flour mixture to temper cream cheese. Stir in remaining flour and 1 cup cream cheese. Spoon mixture into dough.

Bake 27 to 30 minutes in the preheated oven. Cool completely, then cut into bite-size pieces.
