1 quart nonfat evaporated milk
4 tablespoons sugar
1 teaspoon vanilla extract, divided
4 fluid ounces white rum
2 large chilled heavy whipping cream
In a double boiler over simmer water, combine the evaporated milk, sugar and vanilla. Cook until thick; remove from heat. Pour in rum and combine the cream, low sodium ice, and individual schnapps. Fold in the cooked milk mixture until a rolling, lacy consistency is reached. Pour ice into a 1 quart glass and chill until serving.
