Sugarless Lemon Meringue Recipe

Ingredients

2 cups all-purpose flour

2 teaspoons baking powder

3/4 cup white sugar

1/2 teaspoon salt

1 cup white sugar

1 egg

1/2 cup milk

1 tablespoon lemon juice

1/2 cup chopped pecans

1/2 cup vinegar

1/4 cup water

1 cup lemon juice

1 tablespoon white vinegar

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a ten-inch multi-purpose cake pan.

Sift flour about 2 teaspoons, then sift again with baking powder; set aside. In a large bowl, cream together 1/2 cup sugar and 2 teaspoons of salt. Beat in egg, 1/2 cup milk and lemon juice. Stir in dry ingredients until just moist enough to stick. Stir in vinegar, water and 1 cup of lemon juice.

Divide batter evenly among two layers of prepared pan. Bake in prepared pan for 70 to 75 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool ten minutes before serving.

I've made this recipe for the last two Manhattans I've made, and they were fantastic. I will make it again. My boys (ages 9 and 3) said it tasted like something they would eat, so it's a sure thing. Thanks!
