2 cups all-purpose flour
2 teaspoons baking powder
3/4 cup white sugar
1/2 teaspoon salt
1 cup white sugar
1 egg
1/2 cup milk
1 tablespoon lemon juice
1/2 cup chopped pecans
1/2 cup vinegar
1/4 cup water
1 cup lemon juice
1 tablespoon white vinegar
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a ten-inch multi-purpose cake pan.
Sift flour about 2 teaspoons, then sift again with baking powder; set aside. In a large bowl, cream together 1/2 cup sugar and 2 teaspoons of salt. Beat in egg, 1/2 cup milk and lemon juice. Stir in dry ingredients until just moist enough to stick. Stir in vinegar, water and 1 cup of lemon juice.
Divide batter evenly among two layers of prepared pan. Bake in prepared pan for 70 to 75 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool ten minutes before serving.
