This is a great way to use up an excess of veggies on a hot day. I used my pressure cooker which cooked the chicken overnight. I then cooked it up in the baking dish and gave it a good stir. The chicken was juicy and delicious. This is such a great meal because you can customize it to your tastes depending on the vegetables you use. I used red pepper right out of the garden and it turned out absolutely fabulous.

Good recipe as-is, though I did change it a little because I place mine in a larger baking dish. I put mine in my 13x9 baking dish and forgot to put the butter in the eggs, so when I came out to breakfast, the eggs were raw. I put the eggs in a food processor for a few seconds, until they were very dark. I processed them in the blender for a few seconds, until they were very smooth. I placed them in a glass dish, and brushed the butter on for the last 10 minutes. Yum, got a little crazy over here.
