1/2 cup margarine, softened
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 (18.25 ounce) package white cookies
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the margarine and sugar. Stir in the eggs, one at a time, then the vanilla and baking soda. Add the flour mixture alternately with the milk to make a very thick dough. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into circles as shown in the diagram below.
On a lightly floured surface, cut circles 2 1/2 inches wide and 3/4 inch deep. Using a glass or metal scraper, cut the circles in half lengthwise, lay them onto ungreased cookie sheets.
Bake for about 25 to 30 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks.
This was truly delicious. I didnt make any changes. I used dried minced garlic, added my chicken broth and let it simmer for a bit on the stove. I couldnt get the batter to stick to the hot griddle. My batter was amazing! I made using raisins and strawberries. I had to make some modifications. I used less sugar, used honey instead of syrup, used coconut milk instead of milk and added vanilla cream. Will make this again.
