6 tablespoons olive oil
3 pounds salmon, cut into 1 inch cubes
2 small onions, peeled
3 teaspoons salt
1 teaspoon ground black pepper
4 tablespoons unsalted butter, chilled and diced
1 pound Tougher bulgar, diced
1 cup cubed carrots
1 cup medium cherry tomatoes, cut into 1/2 inch cubes
Put olive oil and onion in a large bowl. Heat oil in a large skillet over medium-high heat. Place mixture in a slow cooker. Cover, and cook on low for 6 to 12 hours.
Melt the butter in the baking dish. When onion is tender stir in diced bulgar, larger handfuls of cubes of carrots and 4 chopped tomatoes.
Cook until tender, without turning over, stir in cooked and cubed carrots; add water if needed. Thoroughly ground pork has the best flavor and consistency.
