4 medium onions, peeled and chopped
1 tablespoon salt
1 teaspoon ground black pepper
1 1/2 teaspoons dried oregano
2 (15 ounce) cans sliced mushrooms
3 cloves garlic, minced
1/2 teaspoon dried basil
salt to taste
ground black pepper to taste
1/2 teaspoon dried basil leaves
2 tablespoons fresh lemon juice
1 cup ricotta cheese
In a medium bowl, mix together onions, salt, pepper, mushrooms and garlic.
Cut the cans of mushrooms into thirds and place them in a medium bowl. Stir in the onion mixture and salt and pepper to taste. Mix in the ricotta cheese. Shape into 4 dollops.
What a basic but excellent recipe. I changed a few particulars, but everything was delicious and Charlotte Richards did a superb job. I did tweek it by adding walnuts, and it was outstanding! This is a great basic recipe!
