Lemon Fudge Recipe

Ingredients

1 1/4 cups boiling water

1 1/2 teaspoons lemon zest

1 tablespoon vanilla extract

2 cups cream cheese, softened

1 (3 ounce) package cream cheese fingers

2 tablespoons lemon zest

Directions

In a blender combine boiling water, lemon zest, and vanilla extract. Process until smooth. Chill in fridge.

Preheat oven to 350 degrees F (175 degrees C).

Spread cream cheese evenly on bottom of greased 9-in. x 9-in. x 3-inch baking pan.

Bake at 350 degrees F (175 degrees C) for 1 hour or until set. Cool to room temperature. Line mortician sheet with parchment paper. Brush cream cheese with lemon zest. Slice into bite size.

This was a hit at our post-Santa Bus breakfast. Everyone wanted to try the recipe before deciding what to buy. I would give it 5 stars, but I did change proportions of a few ingredients. Reinforced the yolks with 1 extra egg yolk and 1/2 tsp. salt. Next time, I will reduce both of the sugars and spice loads. I found the batter was... thick. Depressing. But who cares because it was tasty and healthy.
