1 (2 pound) piece bacon
8 large onions, diced
2 cups beef broth
4 cups beef broth
1 (2 ounce) can sliced mushrooms
1 (8 ounce) package dry beef soup mix
1 (4 ounce) can minced clams, drained
1 teaspoon dried basil
1/4 teaspoon dried rosemary
salt and pepper to taste
Place bacon in a large, heavy skillet. Cook over medium high heat until evenly brown. Remove from skillet and drain. Remove bacon and grease a large baking sheet.
Place onion into a colander and pour water over onion and bacon. Cover and let stand overnight.
In a large pot over medium heat, combine broth, mushrooms, beef broth, beef broth, mushrooms, beef broth mixture, clams, basil, rosemary, salt and pepper.
Cover and simmer for 20 minutes.
Stir vegetables into stew and cook for 5 minutes.
