8 ounces sliced ham
1 (10 ounce) package frozen chopped spinach
1 (10 ounce) package frozen mixed vegetables, thawed
1/4 cup chicken broth
1/4 cup olive oil
1/4 cup chopped cooked ham
Place ham and spinach in a large bowl. Mix well and store in an airtight container. Cover, and refrigerate 2 to 3 hours. Stir spinach into the fridge, leaving 1 inch of space.
In a medium saucepan over medium heat, cook mixed vegetables and chicken broth together over medium-low heat until well blended. Pour over the ham mixture and stir with your hands until well marinated. Stir the olive oil and ham mixture into the mixture. Place spinach over the marinated mixture and toss it with the chicken broth and olives. Serve immediately. (Or, transfer to a 9x13 inch dish and place 3 inches from the back edge.)
