1/4 cup brown sugar
1 cup finely chopped pecans
1 egg, beaten
3/4 cup butter, melted
1 6 oz. can sliced peaches, drained
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jelly-roll pan.
In a large bowl, combine sugar, pecans, egg and melted butter. Combine vanilla and peaches. Spread mixture evenly into the foil-lined pan.
Bake for 20 minutes in the preheated oven. Cool and store in refrigerator. Leave jelly-rolls around to fill when jelly rolls become heavy.
To make the frosting, stir peach pecans and melted butter into pecan mixture. Form frosting into a 3 inch square. Chill in refrigerator while shaping into a rotisserie.
